Cranberry – Lemon Relish

1 can whole cranberry sauce
1 Fuji apple, coarsely grated
3 tb. lemon juice
1/4 tsp. cinnamon
1/4 tsp. nutmeg
1/4 c. lemon zest

- Grate an apple and mix it with lemon juice immediately to avoid the apple turning brown.
- Fold in the remaining ingredients (except crackers and non-dairy cream cheese).
- Refrigerate mixture overnight to let spices fully blend.
- Spread a layer of tofu cream cheese on crackers and spoon the mixture on top. Garnish with additional lemon zest.
